• 4 lbs cooked Norbest Sweetheart Turkey Roast – ½ inch Dice
  • 1 cup prepared basil pesto
  • 1 cup mayonnaise
  • 6 slicing tomatoes
  • 1lb Fresh Mozzarella (¼ in slices)
  • Fresh Basil leaves and Extra Virgin Olive Oil
  • Coarse Sea Salt from Grinder or Kosher Salt


Combine the pesto and mayonnaise, fold in diced turkey and allow flavors to meld from 2 hours to overnight. Slice tomatoes and place one slice as a base on the plate, using a ring mold placed over the tomato fill the mold with 4 oz of diced turkey dressed with the pesto dressing. Top with a second slice of tomato and 1 slice of Mozzarella cheese. Drizzle EVOO over all and season with coarse salt, garnish with basil leaf.
