• 5 lbs. Shredded Red Cabbage
  • 5 tbsp. Table Salt
  • 2/3 cup Granulated Sugar
  • 2.5 cups Russian Dressing
  • 40 Norbest Turkey Burger Patties
  • 40 slices Low Fat Swiss Cheese
  • 5 cups Whole Grain Mustard
  • 40 Kaiser Rolls


For the pickled cabbage: Slice the cabbage thinly and place in a large bowl. Sprinkle with the salt, sugar and ground caraway seeds. Toss cabbage to coat with the seasonings and allow to sit for at least 30 minutes up to an hour. Add vinegar to seasoned cabbage and mix thoroughly to combine. Pickled cabbage is best prepared a few hours up to a day ahead but can be used immediately if desired. Season the turkey burger with salt and pepper and place in an oiled pre-heated frying pan. Cook the turkey burger until it reaches an internal temperature of 165°F. Place the slice of Swiss cheese over the hot burger and allow it to melt. Toast the cut side of the Kaiser roll in the same pan the burgers were cooked in. Assemble the burger: spread the Russian Dressing on the bottom of the Kaiser roll, pile the pickled cabbage on top, followed by the cooked burger with the melted Swiss cheese. Top it all with a generous dollop of whole grain mustard and the top of the Kaiser roll.
