• 1 recipe turkey meatballs (see "Meatballs" in index)
  • 1/2 cup brown sugar
  • 3 Tbs cornstarch
  • 1 can (20 oz) pinapple chunks, juice reserved
  • 6 Tbs water
  • 3 Tbs vinegar
  • 1 Tbs soy sauce
  • 1 large green pepper, chopped


Prepare meatballs according to basic recipe. Shape into meatballs, but do not cook. Combine brown sugar and cornstarch in a deep 2-quart microwave-safe casserole dish. Stir in pinapple juice, water, vinegar, and soy sauce. Microwave at 100% power for 5 minutes, stirring twice.

Stir in green pepper. Add meatballs and cover. Microwave at 100% power for 6-7 minutes or until meatballs are no longer pink inside. Gently stir in pineapple chunks. Microwave uncovered at 100% power for 2 minutes.

Serves 6
